It’s big business. REALLY big. The fastest growing food category in the last few years, its growth has been fueled by industry reports and the increasing media attention to the idea that somehow, someway, chocolate had gone from being a bottom of the food pyramid, detrimental to your health, off everybody’s list, to becoming the most nutritionally balanced food on the planet. REAL chocolate that is!
No one knows better the story behind the rising food star than Cathy J. Bouchard of Naperville, Illinois. Over the last decade she has become the foremost expert on chocolate, cacao, and current and potential health benefits. Her story years ago set off the Chocolat”ing” of AmericaTM that is sweeping the country. Although Chocolate has always been a favorite snack food in America, and has never really been out of sight for over 100 years since the introduction of “milk chocolate”, it is now back in vogue because of Bouchard’s profound story. Considered an indulgent luxury and a sugar laded “forbidden food” in its adulterated and cloned American versions, doctors thoroughly dismissed it as a junk food. Thought to be unhealthy and laded with trans fats (that were substituted for healthy cocoa butter), no diet could ever include chocolate. Unfortunately, most of American chocolate remains unhealthy for a number of reasons unknown to most consumers.
Slowly over the years, the real story of what’s going on with chocolate is reaching the surface, but there are many misconceptions still surrounding the decadent treat. Real Chocolate, pure chocolate, the kind the Europeans have been partaking of for centuries, can change lives as it did Cathy Bouchard’s. After developing a daily regime of high doses of cacao (in chocolate), she cured herself of not only the Fibromyalgia that debilitated her life for nearly 9 years (of which as of 2010 there is NO known cure), but also of many of the symptoms associated with it such as IBS, heartburn, chronic fatigue, muscle cramping, migraines, joint pain and depression.
Currently, Cathy Bouchard’s intensive 5 year study of several hundred customers on her “Chocolate Regimen” has borne out her original theories with very satisfying results. Reports have come in about blood pressure being lowered, cholesterol levels improved, no more migraines, relief from nausea of chemotherapy, morning sickness, arthritis pain lessened, memory improved, skin improved, weight loss achieved, and in general a feeling of well being and increased energy levels being sustained.

Nearly giving up after 2 months of searching, she finally stumbled across high grade 70% European chocolate. After 6 weeks of eating the chocolate daily, (in the morning on an empty stomach) she realized she had her life back after 9 years of suffering. It had come back slowly. She had gone from being nearly bedridden, unable to travel, do housework or run her business. When she realized the pain was gone, she was making her bed daily, she was back to her employees and fixing dinner nightly – she knew she had received her miracle. Today she shares her “miracle” story of the healing power of “cacao” and has given over 200 seminars and lectures in the Chicagoland area. She is currently writing a book covering her incredible journey through the “dark” side of chocolate.
